Recipe of the Week:
MUNNER’S DELIGHT CAKE
- 1 (20 OZ.) can crushed pineapple (do not drain)
- 2 cups sifted flour
- 2 cups sugar
- 1 tsp. baking soda
- 1 tsp. vanilla
- 1 cup broken pecans
This is a ‘DELIGHTFUL’ cake named after my children’s grandmother … better known as Munner. Munner baked so many of these for us through the years. The original cake recipe is from the depression era and uses no milk, eggs, or oil. The yummy topping was added during better times. (And we are so glad it was)! Enjoy.
Mix together undrained pineapple, flour, sugar, baking soda, vanilla and pecans. Spread evenly into greased 9X13 pan and bake at 350* for 30 minutes or until golden brown. Remove from oven and spread with topping immediately
TOPPING
¾ cup sugar
(8 oz.) cream cheese, softened
1 stick butter, softened
½ cup broken pecans
¾ cup sugar

Mix together sugar, cream cheese, butter and pecans. Spread over HOT cake as soon as you remove it from the oven. When cooled, refrigerate the cake and serve chilled.
